Spanish Musica Pole Beans** Sold Out for the Season! **
65 Days to harvest. For many years, our personal favorite Pole Bean! (Another casualty of the seed-rush of the early pandemic days; we're so happy to have it back!) Spanish Musica produces huge yields of long, broad, flat Romano-type beans that are tender and succulent. Harvest a handful every day, store in the fridge, and by week's end you've got a nice pot to cook up!
Most Fridays, I start by sauteing some of our own homegrown garlic, then add in 1-2 lbs of snapped, washed beans. Cover completely with water, add salt & pepper, a big handful of slivered almonds, and a generous dose of a good White Wine Vinegar. Once this begins to boil, I turn it to a very slow simmer and cook for literally 2-3 hours. They remain solid, yet fork-tender, and are amazingly flavorful. They are also delicious chilled after a quick 1-2 minute blanching, tossed with olive oil, cherry tomatoes and grated parmesan.

Corn is wind-pollinated. It must be grown in a "block", not a row!! The pollen will fall from the fully developed Male flower, which is the Tassle on top of the plant, to the developing Female flowers, which are the Silks. Each Silk attaches to an individual kernel and must be pollinated or you'll have missing kernels!!
Harvest when the silks are browned out.
Test ripeness by pulling back a bit of husk, and stick your thumbnail into a full kernel: if nothing comes out, it's too dry, and too late! If the liquid is clear, it's too early (just close up the husk and let it grow a few more days.) If the liquid is milky, it's perfect!! Harvest that instant (!!) by breaking ear off in a downward motion.
Store in the fridge or put it straight in the steamer to cook.
Pay attention to get the timing just right for optimal tenderness & sweetness.
To prevent Ear Worms, place a few drops of Mineral Oil (available at drugstore) on the Silks as they develop.

We grow these in the Spring/Summer, but the fruits "keep" for so many months, they're called "Winter Squash" (we usually eat our last one in March!).
These need room to roam; the vines don't root down, so you can gently move them if they get in the way. They can also be trained up an inverted-V trellis (especially Festival Acorn and Baby Honeynut).
Harvest when foliage is browned out and you can't puncture with a thumbnail.
Cut from vines and let them "field cure" for a week or so in the sun, then store in a cool dry place.
Climbing Honey Nut (Baby Butternut)
110 Days. Heirloom. This adorable "single serving" Butternut hybrid was developed by Cornell University. It produces 4-5" fruits on mildew-resistant vines which easily climb any trellis or teepee. Flavor is very rich, sweet and nutty! Honey Nuts need time to ripen properly, so don't harvest until the vines have died back. Cure the harvested fruits in the sun for 10 days and then store in a cool dry place. They'll keep for months.

Dashiell and his lovely family used to live next door to us. He loved our garden, our dogs, our trucks, the Nursery and the pond. One year we grew this Big Max Pumpkin for him to have for Halloween; a customer suggested we lightly "carve" his name into it when it was small and watch it scar over as the pumpkin grew. Dashiell checked in on it nearly every day. Then we got the sad news that he and his family were moving out of state at the end of October. Just days before their move, we had a little "harvesting ceremony"...it weighed in at 12 lbs. We packed it up carefully, and Dashiell's family drove with it to New York where he kept it for nearly a year!
